Poor Man’s Pudding (submitted by Mariah Andrews)
Mariah Andrews created this video for the Politics of Food and Politics Class at Concordia University. Her video features the recollection of a daily recipe that was made as dessert by Jean Fortner for her five children in the early 1960’s.
This is my 91 year old grandma, making the pudding that is known and loved by my entire family.

1 Cup Sugar
Piece of Butter/ Shortening
1 Cup of Flour Sifted
1 Tsp. Baking Soda
Make a Soft Dough of above ingredients and put into a greased pan and pour over it the following;
1 1/3 cups of brown sugar
1 Cup of coconut
2 1/2 cups of hot water
Bake to a Golden Brown at 350 degrees for 25 minutes.
